No-Bake Cheesecake
Cheesecake is one of our most favorite desserts. We started experimenting with healthier options, and came up with this amazing and super-simple no-bake low-carb recipe! Now you might wonder if this will tastes authentic? As a ‘self-proclaimed’ cheesecake connoisseur, Ameya can guarantee that this one is as creamy and delicious as authentic NY style cheesecake. Ingredients
Crust
- 2 tbsp Almond Flour ( you can simply make this by crushing almonds in food processor until flour like consistency)
- 1 tbsp Butter
- 1 Square Lindt Dark Chocolate 95%
- 1 tsp Stevia ( you can use Erythritol or regular sugar if not going for Low-carb)
Cheesecake
- 4 Oz Cream Cheese Full fat, bring it to room temperature.
- 6 tbsp Heavy Whipping Cream
- 1 tsp Lemon Juice Don't forget! This is necessary for the authentic taste!
- 1/4 Cup Stevia ( you can use Erythritol or regular sugar if not going for Low-carb)
- 1 tsp Cocoa Powder Optional
Instructions
Crust
- Melt butter and chocolate square in the microwave for about 30 seconds.
- Add almond flour and erythritol.
- Place the crust mix at the bottom of four molds or glass cups and put it in the freezer.
Cheesecake
- Mix cream cheese, heavy cream, lemon juice and erythritol.
- Take out the molds/glass cups out of the freezer and pour in the mixture equally in all.
- Put them back in the freezer for about 1.5 hours.
- Spread cocoa powder for garnish on top (Optional)
Notes
- The cheesecake “batter” is delicious as it is and if you are too eager like me, you can have it without freezing!
- The cheesecakes can be stored in the refrigerator for upto 10 days but if you have to store them for that long, why are you even making them? Mine didn’t last more than a day π
- You can use 2 tbsp sour cream instead of 2 tbsp heavy cream and lemon juice.
- You can replace Lindt chocolate with any dark chocolate or even use 1tbsp unsweetened cocoa powder instead.
- If the cheesecakes are hard after freezing, just let them sit outside for 5 minutes before devouring them.
